Ingredients
 
 

  • 125 g soft butter room temperature
  • 90 g brown sugar or can be replaced with another sweetener
  • 2 eggs
  • 1 tsp vanilla
  • grated rind of 2 or 3 limes
  • 200 g all purpose flour
  • 50 g coconut flakes
  • 1 pinch of salt

Instructions
 

  • Mix all the ingredients (it doesn’t have to be perfect) and form balls of about 20g (about 1 oz), then flattened them and put on a tray lined with baking paper.
    Coconut Cookies w/ Vanilla and Lime
  • The dough doesn't need to be perfect, it's the imperfections that give these cookies their homemade charm. Form the dough into balls and flatten them slightly before placing them on a baking tray lined with parchment paper.
  • Place the tray in a preheated oven at 170 °C (338 °F) with fan on, for 12-14 minutes. When they’re done, they’ll be lightly golden on the edges and just set in the middle.
