Ingredients

For the Pork Loin Roll:

  • 2 kg pork loin opened for rolling
  • 1 clove garlic finely chopped
  • 2 tbsp mustard

For the Stuffing:

  • 200 g bacon
  • 1 onion finely chopped
  • 300 g white mushrooms sliced
  • 1 red bell pepper finely chopped
  • 100 ml white wine
  • 80 g sun-dried tomatoes finely chopped
  • 1 tsp oregano
  • Salt
  • Pepper
  • Olive oil

For the Coating:

  • 2 tbsp mustard
  • 2 tsp oregano
  • 2 tsp smoked paprika
  • Olive oil

Instructions

  • Preheat the oven to 180° C/356° F, with both top and bottom heat elements.
  • Lay the pork loin out on the kitchen top. Using a knife, make small incisions all over the surface. Insert the garlic into these holes to infuse flavor. Brush the entire surface with mustard.
  • Heat a skillet over medium heat. Sauté the bacon for 3-4 minutes until crispy. Remove from the pan and set aside.
  • In the same skillet, add a little olive oil if needed and sauté the onion for 2-3 minutes. Add the mushrooms, red bell pepper, sun-dried tomatoes, and oregano. Continue cooking for 4-5 minutes.
  • Pour in the white wine, season with salt and pepper, and stir well. Return the crispy bacon to the pan. Remove from heat and let the filling cool for 5 minutes. Spread the mixture evenly over the pork loin.
  • Roll the pork loin up tightly and secure with kitchen twine.
  • Brush the rolled pork loin with olive oil and mustard. Sprinkle with smoked paprika and oregano.
  • Heat a large skillet over high heat. Sear the pork loin for 1 minute on each side, until browned.
  • Place the roll in a baking tray lined with parchment paper, then cover it with another sheet of parchment paper and aluminum foil. Bake for 1 1/2 hours, then uncover and bake for an additional 20 to 30 minutes.
  • Let the roll cool for 10 minutes, remove the twine, cut into portions and serve – either with mash or baked potatoes.

Notes

Chef’s tip: If preferred, it can be wrapped and roasted in parchment paper or a Dutch oven.

Ingredients

  • 160 g sultana raisins
  • 200 ml rosé sparkling wine
  • 500 g long grain rice
  • 1 large onion sliced thinly
  • 2 cloves garlic minced
  • 140 g cashews roasted and coarsely chopped
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • salt
  • pepper
  • olive oil

For serving:

  • Cashews
  • Sultana raisins

Instructions

  • In a bowl, combine the raisins and the sparkling wine, allowing the raisins to soak for 30 minutes. After, drain the raisins and reserve the sparkling wine for later use.
  • Heat a pot over medium heat, adding a drizzle of olive oil and the sliced onion. Sauté until caramelized.
  • Next, add the minced garlic and sauté for an additional minute. Deglaze the pot with the reserved sparkling wine, allowing the alcohol to evaporate.
  • Meanwhile, fill a deep pot with water and bring it to a simmer. Add a splash of olive oil, salt, and pepper, then introduce the rice. Cook for about 7 minutes until tender.
  • In the pot with the sautéed onions, add the cinnamon and cloves, stirring to combine.
  • Drain the rice and add it to the onion mixture. Season with salt and pepper, then incorporate the raisins and chopped cashews. Stir until everything is heated through.
  • Transfer the mixture to a 20 cm (8 inch) bundt pan, pressing it down gently with a spoon. Invert onto a serving plate.
  • Serve the festive rice garnished with additional raisins and cashews. Enjoy!

  • 1 chicken whole, cleaned and deboned

For the filling:

  • 1 onion finely chopped
  • 400 g spinach washed and roughly chopped
  • 2 tbsp dill finely chopped
  • 2 tsp mint finely chopped
  • 2 tsp parsley finely chopped
  • ½ fresh green onion finely chopped
  • 100 g feta cheese
  • salt
  • pepper
  • olive oil

Instructions

  • Preheat the oven to 180°C/355° F, with both top and bottom heating elements.
  • Heat a pan over medium heat, add a little olive oil, and sauté the onion for 3-4 minutes until it starts to caramelize.
  • Add the spinach, dill, mint, parsley, and green onion. Sauté for an additional 2-3 minutes until the spinach has wilted.
  • Add the feta cheese, salt, and pepper. Stir and cook for 5 minutes. Transfer the filling to a strainer and let it cool and drain excess liquid.
  • On a work surface, lay out the chicken, brush with a little olive oil, and season with salt and pepper. Spread the filling evenly over the surface of the chicken, roll it up carefully, and tie it with kitchen twine at 5 points.
    If the chicken is uneven in thickness, you can gently pound the thicker areas with a meat mallet to flatten them. This will help it roll more easily and cook evenly.
  • Heat a large pan over high heat and sear the roulade for 1 minute all over until well browned.
  • Transfer the roulade to a baking tray lined with parchment paper, cover first with parchment paper and then with aluminum foil, and bake for 1½ hours. Then uncover and bake for an additional 20-30 minutes until golden brown.
  • Let the roulade rest for 10 minutes, remove the twine, slice into portions, and serve with mashed or roasted potatoes.

Notes

Chef’s tip: If desired, rather than wrap and bake in parchment paper, place the roulade in a covered dish. It is important to flatten the chicken pieces to ensure there are no gaps.

Ingredients

For the dough:

  • 250 g flour
  • 250 g butter
  • 60 g almond flour or very finely ground almonds
  • 150 g sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tbsp cold water added after the batter has been mixed

For the chocolate cream:

  • 150 g milk chocolate chips
  • 150 ml heavy whipping cream

For decorating:

  • powdered sugar

Instructions

  • To make the cookies dough, crumble the butter and flour and add the rest of the dough ingredients. Add a tablespoon of cold water and knead until it comes together to form a ball.
  • Roll out the dough between two sheets of parchment paper until you get a thin 1-2 mm ( ~1/16 inch) sheet (as in the picture below). Leave it in the fridge exactly like this for about 1 hour (rolled out perfectly, do not roll up or fold).
    Linzer Cookies with Chocolate Cream
  • In the meantime, heat the whipping cream in a saucepan over medium heat until it just begins to simmer (almost to boiling point).
    Add the finely chopped milk chocolate to the hot cream and stir until the chocolate is completely melted and smooth. Let the ganache cool to room temperature before using.
  • Remove the dough from the refrigerator and cut out the Linzer shapes using a Linzer cookie cutter. For each cookie, you’ll need one solid piece and one with a cutout in the center.

  • Bake the cookies for 15 minutes at 180 °C/356 °F (preheated oven) or until golden brown around the edges.

  • Let the cookies cool and then start assembling them. Place the chocolate ganache on a full cookie and place a cut-out cookie on top.
  • Sprinkle with powdered sugar and enjoy with your loved ones.
  • You can store them in zip lock bags, cookie tins or jars.

Ingredients

  • 1 whole chicken
  • 150 g dried prunes
  • 30 g pine nuts
  • 250 g butter cut into cubes, at room temperature
  • 3 tbsp dried rosemary
  • 2 large onions cut into large chunks
  • 2 carrots cut into large chunks
  • 2 bay leaves
  • 2 stalks celery chopped
  • 1 tsp peppercorns
  • 1 l water
  • salt
  • pepper
  • olive oil

Instructions

  • Preheat the oven to 180° C/ 356° F, on convection mode.
  • In a bowl, mix 200 g (7 oz) of butter, rosemary, salt, and pepper thoroughly, wearing disposable gloves.
  • Place the butter mixture under the skin of the chicken. This is done by gently separating the skin from the meat (without removing it entirely) to create a pocket between the two. The herbed butter mixture is then spread directly onto the meat beneath the skin.
    This technique helps keep the meat moist and infuses it with the flavors of the butter, rosemary, salt, and pepper during roasting.
  • Season the inside of the chicken with salt and pepper, then stuff it with the pine nuts, prunes, and the remaining butter. Tie the legs with kitchen twine.
  • In a roasting pan, spread out the onions, carrots, celery, bay leaves, and peppercorns, and pour in the water.
  • Place a rack over the pan and put the chicken on top. Cover it well with parchment paper and aluminum foil and roast for 1 hour.
  • After, uncover the chicken and continue roasting for an additional 20 minutes, until the skin turns golden brown.
  • Transfer the contents of the pan to a saucepan and blend with an immersion blender until it becomes a thick sauce.
  • Place a fine-mesh strainer over a bowl and strain the sauce to achieve a smooth texture.
  • Return the sauce to the saucepan and simmer until it thickens.
  • Serve the chicken hot, drizzled with the sauce.

Chef’s tip: Place the butter under the skin to make it crispier while keeping the meat juicy.

Christmas Rice & Brussels Sprout Salad

A great salad for your Christmas table made with crispy rice, brussels sprouts, blue cheese, almonds and pomegranate seeds. Yummy!

Ingredients

For the salad:

  • 500 g Carolina rice
  • 500 g Brussels sprouts boiled and halved
  • 1 red onion thinly sliced vertically
  • 60 g toasted almond slivers
  • 80 g pomegranate seeds
  • 100 g baby spinach
  • 150 g blue cheese
  • olive oil
  • salt
  • pepper

For the dressing:

  • 120 ml olive oil
  • 2 tbsp white vinegar
  • 4 tbsp honey
  • 1 tsp ground cinnamon
  • salt
  • pepper

Instructions

  • Heat a skillet over medium heat, add a little olive oil, and sauté the Brussels sprouts until they take on a light color. Remove from heat and set aside.

For the rice

  • Place a large pot with plenty of water over medium heat, add a little olive oil, salt, and pepper. Once it starts to boil, add the rice and cook for 7 minutes.
  • Drain the rice and set aside.

For the dressing:

  • Combine the olive oil, vinegar, honey, cinnamon, salt, and pepper in a bowl. Whisk well and set aside.

For the assembly:

  • In a large serving bowl, combine the rice, red onion, toasted almond slivers, and pomegranate seeds. Drizzle with a bit of the dressing and mix well.
  • Add the baby spinach, blue cheese, and Brussels sprouts. Toss again and serve.

Pork Roulade with Prosciutto and Mushrooms

This pork roulade with prosciutto and mushrooms is a flavorful centerpiece that combines tender pork shoulder with a filling of earthy porcini and white mushrooms, fresh thyme, rosemary, and a splash of cognac.

Ingredients

  • 2 kg pork shoulder (neck) opened into a roulade

For the filling:

  • 50 g dried porcini mushrooms soaked in 200 ml water for 20 minutes
  • 200 g white mushrooms sliced thinly
  • 1 onion finely chopped
  • 2 cloves garlic finely chopped
  • 2 tsp thyme finely chopped
  • 50 ml cognac
  • 2 tsp rosemary finely chopped
  • 10 slices prosciutto (or bacon)
  • salt
  • pepper
  • olive oil

Instructions

  • Preheat the oven to 180°C/356°F, using both top and bottom heating elements.
  • Drain the dried porcini mushrooms, pat them dry with a paper towel, and chop them finely.
  • Heat a pan over medium heat, add a little olive oil, and sauté the onion for 3 minutes. Next, add the sliced white mushrooms, garlic, rosemary, and thyme, and continue to sauté for another 3-4 minutes. Deglaze the pan with the cognac, season with salt and pepper, and let it simmer for an additional 2-3 minutes.
  • Lay the pork roulade on a work surface, rub with olive oil, and season with salt and pepper. Spread the mushroom mixture evenly over the surface of the pork. Roll it up tightly and tie it with kitchen twine at 5 points.
  • Rub the outside of the roulade with olive oil, and season with additional salt and pepper. Place in a large, preheated skillet over high heat and sear for 1 minute on each side until it gets a nice color.
  • Transfer the roulade to a baking tray lined with parchment paper, cover with parchment and aluminum foil, and roast for 1.5 hours. After, remove the cover and roast for an additional 20-30 minutes.
  • Let the roulade rest for 10 minutes before removing the twine. Slice into portions and serve with mashed potatoes or roasted potatoes.

Notes

Chef’s tip: If desired, we can wrap the roulade and bake it in parchment paper or in a covered dish.

Gingerbread Christmas Donuts

These gingerbread man shaped Christmas donuts are fluffy, golden treats infused with warm ginger, cinnamon, and clove. Each donut is coated in a festive sugar-spice mixture that adds a touch of holiday magic in every bite.

Ingredients

For the donuts:

  • 300 ml full-fat milk
  • 9 g dry yeast
  • 50 g granulated sugar
  • 2 medium eggs
  • 100 g melted butter
  • 600 g all-purpose flour
  • 1 pinch of salt
  • 1 tbsp grated ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • cooking oil for frying

For the coating:

  • 200 g granulated sugar
  • 1 tbsp grated ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves

Instructions

For the coating:

  • In a large bowl, combine the sugar, ginger, cinnamon, nutmeg, and cloves. Mix with a spoon and set the mixture aside.

For the donuts:

  • In the mixer bowl, combine the milk, ginger, sugar, flour, cinnamon, cloves, yeast, eggs, and butter. Knead with the hook attachment on medium speed for 8 minutes until a dough forms.
  • Transfer the dough to a lightly greased large bowl, cover with plastic wrap, and let it rise for 1 hour until doubled in size.
  • Place the dough on a floured surface and roll it out into a rectangle, about 1 cm (~1/3 inch) thick.
  • Use a gingerbread man-shaped cookie cutter to cut out the donuts.
  • Heat a deep frying pan over medium to high heat, add the sunflower oil, and fry the donuts until they turn a beautiful golden color.
  • Transfer the donuts to a plate lined with paper towels, then dip them into the sugar-spice mixture, making sure the sugar sticks all around.
  • Serve the donuts and enjoy!

Notes

Chef’s tip: The oil shouldn’t be too hot to ensure that the donuts cook thoroughly on the inside.

Ingredients

  • 2.7 kg smoked ham
  • 120 g butter at room temperature
  • 200 g granulated sugar
  • 170 g honey
  • 2 tbsp mustard
  • ¼ tsp ground cinnamon
  • ¼ tsp ground cloves
  • 4 cloves garlic crushed

For serving:

  • Roasted vegetables of your choice

Instructions

  • Preheat the oven to 150°C/300° F, at convection mode.

For the glaze:

  • In a small saucepan over medium-low heat, melt the butter until it turns a beautiful golden brown.
  • Add the sugar, honey, mustard, cinnamon, cloves, and crushed garlic. Stir well and let it boil for 2 minutes. Set the glaze aside.

For the ham:

  • Place the ham on a cutting board and use a sharp knife to create small diamond-shaped cuts on its surface.
  • Wrap the ham tightly in aluminum foil and place it on the oven rack, with a tray filled with water underneath to catch the dripping.
  • Roast the ham for 30 minutes.
  • Remove the ham from the oven, unwrap it, and brush it with one-third of the glaze mixture.
  • Increase the oven temperature to 220° C/430° F and roast for an additional 10 minutes. Repeat this glazing process two more times, roasting a total of 30 minutes, until the ham is nicely caramelized.
  • Serve the caramelized ham alongside roasted vegetables.

Notes

Chef’s tip: Brush the meat with the glaze every 10 minutes to achieve a beautiful caramelization.
