Crispy, Cheesy Potato Fritters

Potato and Parmesan Fritters - Tocinei

This crispy potato and cheese fritters recipe is inspired by a traditional Romanian recipe called tocinei, which are a part of every Romanian’s childhood.

They are a round and crispy fritter made with grated and fried potatoes. This recipe version includes parmesan cheese (cheddar cheese is an option as well) and they are cooked in an air fryer.

If you don’t have an air fryer, you could bake them in the oven.

These potato fritters go well with a delicious aioli and fresh salad and are a great choice for both lunch and dinner.

These potato fritters are a family-favorite and a perfectly paired with a side or aioli and a fresh salad.

Ingredients
 
 

  • 4 large potatoes
  • 1/2 tsp salt
  • 1 egg
  • 150 g parmesan cheese grated
  • 2 green onions

Instructions
 

  • Grate the potatoes into a large bowl and sprinkle them with salt.
  • Using your hands, press the potato together and squeeze out as much water as you can.
  • Add the egg, finely chopped green onion, and Parmesan cheese to the potato.

  • Shape 4-5 cm (1 ½-2 inches) flattened balls and place them either in the airfryer or in a baking pan lined with parchment paper.
  • Bake for 10-15 minutes at 180ºC/356°F on each side, 20-30 minutes in total, and flip the potato balls after 10 minutes.
    They are ready when they are golden on both sides with brown edges.
