Mortadella, Burrata and Pesto Focaccia Sandwich

Sandwich with Basil Pesto and Mortadella

This is an amazing sandwich with some of the best traditional Italian ingredients: mortadella, burrata, pesto, balsamic vinegar, arugula and focaccia.

You can make it with store-bought focaccia and pesto or you can make your own. Here’s a delicious onion focaccia recipe and a basil pesto recipe by Chef’s Pencil founder, Chef Paul Hegeman.

The recipe calls for balsamic cream, which can be bought in specialty stores or online (see Amazon link). However, you can use a balsamic vinaigrette or reduced balsamic as a substitute.

Burrata can also be replaced with regular mozzarella, though we prefer the creamier burrata for this sandwich.

Ingredients
  

  • 1 focaccia
  • 10 slices mortadella
  • 2 mozzarella burrata
  • 3 tbsp pesto
  • 1 large tomato sliced
  • arugula
  • balsamic cream (balsamic vinaigrette or reduced balsamic can also be used)
  • extra virgin olive oil
  • salt
  • pepper

Instructions
 

  • Cut the focaccia horizontally in half.
  • Break the mozzarella with your hands and spread it over the whole surface of the bread.
  • Spread the pesto with a spoon, then place the slices of mortadella, tomato, arugula, olive oil, salt, pepper and balsamic cream.
  • Place the other half of the focaccia on top, cut into 4 and serve.

Notes

Chef’s tip:
1. If you don’t have burrata in your pantry you can replace the burrata with sliced mozzarella.
2. If you prefer, replace the basil pesto with arugula pesto.
