Mashed Beans with Fried Egg & Fresh Oregano

This mashed beans recipe works great as a side dish for pork chops, pork tenderloin, roasted chicken, and pretty much any type of sausages.

Ingredients
 
 

  • 100 g white beans
  • 1 egg
  • 1 bunch salad
  • 1 tsp sweet paprika
  • 1 sprig fresh oregano
  • 10 ml olive oil
  • salt
  • leek ash optional

Instructions
 

  • Soak the beans in a bowl of water in the refrigerator for 12 hours.
    Then rinse and boil in salted water. Once cooked, drain the beans, but keep the boiling water, and process the beans in a blender, gradually adding more of the boiled water until you get a smooth cream. Add salt to taste.
  • Fry the egg in a pan with a little oil.
  • Place the fried egg on top of the mashed beans, add the lettuce, oregano leaves and season with paprika and salt.
