Syrniki with Blueberries

Russian Syrniki with Blueberries

Syrniki are traditional Russian and Ukrainian pancakes made from quark cheese (similar to cottage cheese), eggs, flour, and sugar. They are often fried until golden brown and served as a sweet breakfast or dessert, typically accompanied by sour cream, jam, honey, or fruit.

Syrniki are an extremely appetizing mix of Central European boiled cheese doughnuts and American pancakes. They are slightly crunchy on the outside, but the inside is, although dense, somewhat creamy. The blueberries are unexpectedly tasty and a perfect addition.

These pancakes are just as good as they look and well worth making for breakfast or dessert. They are best eaten while warm, as soon as they come out of the pan as possible as once they cooled, they tend to harden and are not as tasty.

Ingredients
 
 

  • 500 g cottage cheese (or quark)
  • 1 egg yolk
  • 1 tbsp sugar
  • 2 tbsp semolina
  • 4 tbsp flour
  • 1 tsp vanilla essence
  • 50 g blueberries
  • powdered sugar blueberries and Greek yogurt for serving

Instructions
 

  • Drain the excess water from the cottage cheese.
  • Add the egg yolk, sugar, and vanilla essence and mix.
  • Stir in the flour and semolina. If the mixture calls for it, you can add another tablespoon of flour. The mixture should be thick enough to shape in your hand.
  • Add the blueberries and gently fold in, stirring carefully.
  • With floured hands, shape 12 balls and place them on a floured surface.
  • Flatten each ball with a spoon.
  • Heat some oil in a frying pan, then fry the doughnuts over medium heat for about 2 minutes on each side.
  • Using a spatula, transfer the fried doughnuts to an absorbent towel to drain any excess oil.
  • Put two tablespoons of Greek yogurt on a plate, then place the doughnuts on top and sprinkle with powdered sugar and blueberries!
