You can’t let summer pass by without making peach cobbler. That would be almost like summer never came!

This peach cobbler recipe combines juicy, sweet peaches with a buttery, golden-brown crust. Simple to make and bursting with flavor, it’s the perfect dessert for any occasion, especially when peaches are in season.

Ingredients
 
 

  • 100 gr butter
  • 150 gr packed brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 100 gr all-purpose flour
  • 70 gr almond flour
  • 125 gr quick cooking oats
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 kg fresh peaches about 8 medium sized
  • zest of 1 lemon
  • 2 tsp honey
  • 1 tbsp lemon juice

Instructions
 

  • Cream together the butter and sugar in a bowl. Add the egg and vanilla extract. In another bowl whisk together the flour, almond flour, oats, baking soda and salt. Incorporate the flour mix into the butter mix. Place in the fridge for 20 mins.
  • Slice the peaches into wedges and mix in the lemon zest, lemon juice and honey.
  • Butter a cast iron skillet or a baking dish and line with the peaches. Place dollops of batter on top, leaving some space in between each one.
  • Bake in a preheated oven at 180°C/356°F for 30 mins.
  • It's best served with creamy vanilla ice cream. Enjoy!

Notes

Tip: You can switch the peaches in this recipe for any stoned fruits available in season.
