Belgian Steak Tartare

Steak Tartare is a delicious Belgian classic appetizer known for the world over. It features raw ground beef, a delicious medley of sauces such as mayonnaise, tabasco and mustard and a mix of shallots, gherkins and chopped parsley for a zing of flavor. It’s often served chilled, in the summer alongside a cold beer that makes everything go down oh, so smoothly!

Steak tartare is delicious and worth at least a try, but since it contains raw ingredients it’s important to pick high quality cuts and serve the dish fresh to get the best out of it. Enjoy!

Ingredients
 
 

  • 5.5 oz ground beef
  • 1 tbsp shallot finely chopped
  • 1 tbsp capers in brine chopped
  • 1 tbsp pickled gherkins chopped
  • 1 tbsp parsley finely chopped + more to garnish
  • 1 tsp Worcester sauce
  • 1/2 tsp lemon juice
  • 1/2 tsp mayonnaise
  • 1/2 tsp Dijon mustard
  • 1/2 tsp olive oil
  • 2 egg yolks small
  • tabasco sauce
  • salt to taste
  • pepper to taste

Instructions
 

  • Place the minced beef into a large mixing bowl and combine with the chopped gherkins, capers and the chopped parsley.
  • Now add the shallots and pour in the lemon juice, olive oil, mustard, Worcester sauce, mayo and a few drops of Tabasco sauce to your liking. Season with salt and pepper to your liking and combine everything thoroughly.
  • You can add the egg yolk in at this point or reserve them to garnish the tartare at the end. It's up to you!
  • Taste the tartare and adjust to your preference.
  • Divide the beef tartare into 2 plates and place them in the fridge to chill before serving.
  • When ready to serve, sprinkle a little bit of salt and freshly ground black pepper and top them with one egg yolk each and a touch of chopped parsley.
