Caramelized Onion Mashed Potatoes with Greek Yogurt

Caramelized Onion Mashed Potato with Greek Yogurt

I’ve loved this mashed potato recipe since childhood. My mother always added sautéed onions to the creamy potato mash, giving it extra flavor. You can add green, white, or red onions, or even sautéed leeks, to this mashed potato recipe, and it’s so good you could eat it on its own.

It’s also incredibly creamy because the butter is replaced by a spoonful of Greek yogurt, making it a healthier dish overall. If you don’t have Greek yogurt in your pantry you can replace it with sour cream or butter (of course).

Ingredients
 
 

  • 7-8 potatoes depending on the amount of mashed potato you want to cook
  • water for boiling
  • salt to taste
  • pepper to taste
  • 1 large onion or 1 bunch of green onions or 1 leek
  • 1 tbsp olive oil
  • 100 g Greek yogurt (or sour cream/butter)

Instructions
 

  • Boil the cleaned and washed potatoes. Drain the water and mash until you get a fine, creamy consistency.
  • Season with salt and pepper and add the yogurt. Stir until you get a soft and creamy texture. You can blend the potatoes using a mixer and then add the rest of the ingredients to get an even lighter texture.
  • In a frying pan, sauté the onion or leek in olive oil, allowing it to soften, until it reaches a light golden color around the edges— make sure to don't allow it to brown!
  • Add the onion to the potato and stir.
  • Enjoy as a side dish paired with a main course of your choice.
