Cheddar Chive Scones

With a long, always-open list of recipe ideas that I’m excited to try, I’ll never get to tick them all off because I’m always adding more and more to the list.

These cheddar chives scones have been sitting on my to-do list for a long time. I should have tried them sooner as they are delicious, soft and extremely, but extremely, quick to make. In 10 minutes you’ll have the dough, in another 5, you’ll have cut them out, and in 15-17 minutes they’ll have browned in the oven.

They can be enjoyed either warm or cold, halved and spread with butter or as they are, for a snack or breakfast, and even for lunch or dinner with a creamy soup.

If you don’t have chives in your pantry you can use parsley, green onions or any other greens you like

Cheddar Chive Scones

Distinctly British, these cheddar chive scones are super easy to make and a great snack or breakfast choice. They're also delicious for lunch or light dinner with a creamy vegetable soup.

Ingredients
 
 

  • 225 g flour
  • 1½ tsp baking powder
  • 1 tsp salt
  • 75 g cold butter
  • 75 g cheddar
  • 125 ml cold milk
  • fresh chives (or parsley)

Instructions
 

  • Preheat the oven to 220°C/430° F.
  • Mix the flour with the baking powder and salt.
  • Add the diced butter and work it in with your fingers until you get a crumbly dough.
  • Add the grated cheddar and then the cold milk and greens. Mix well and shape the dough into a ball.
  • Roll out a 1.5 cm (2/3 of an inch) thick sheet of dough.
  • Cut out the scones with a 5-6cm ( 2- 2⅓ inch) diameter round cutter, place them on a baking tray lined with parchment paper and brush with milk.
  • Bake for 15-17 minutes.
  • Enjoy them warm or cold.
