Asian Lime Chicken Soup

This vibrant Asian soup is a symphony of fresh vegetables, tender chicken, and satisfying noodles, all bathed in a fragrant and soothing lime and ginger-infused broth.

Asian Lime Chicken Soup

Asian Chicken & Lime Soup

Ingredients
 
 

  • 600 ml chicken stock
  • 100 g chicken breast
  • 40 g carrot
  • 30 g celery
  • 30 g chili pepper
  • 30 g zucchini
  • 40 ml soy sauce
  • 10 g ginger
  • 1 lime
  • 50 g glass noodles

Instructions
 

  • Clean the veggies then cut them into julienne strips. Grate the ginger.
  • Cut the chicken breast into thin strips.
  • Soak the noodles in hot water for 3-4 minutes, then rinse with cold water.
  • Heat the stock together with the soy sauce, ginger and lime juice until they start to boil. Then add the chicken and cook for a few minutes until the chicken breast is cooked.
  • Put the veggies and the noodles in a bowl. Pour in the hot soup. For a slightly spicy flavor, add some thin slices of chili pepper.
