Greek Oregano Beef Liver - Riganato

Riganato is a traditional Greek dish that you’ll surely love. Thin slices of beef liver are quickly sautéed to golden perfection in a hot pan with extra virgin olive oil, then seasoned with salt and pepper. A deliciously tangy flavor is added to the dish with the addition of lemon juice and mustard.

Freshly chopped garlic, oregano, and thyme provide a delightful Mediterranean aroma and flavor that perfectly complements the liver.

Ingredients
 
 

  • ½ kg beef liver thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 lemons juiced
  • 1 tbsp mustard
  • 1 garlic clove finely chopped
  • 2 tsp oregano
  • 1 tsp thyme finely chopped
  • salt
  • pepper

Instructions
 

  • Slice the liver thinly and evenly so that it doesn't get under or overcooked.
  • Place a pan over a high heat. When hot, add the olive oil, then the liver and season with salt and pepper.
  • Sauté for 1 minute until golden on one side, turn over and sauté for 1 more minute.
  • Add the lemon juice, mustard, garlic, oregano, thyme and stir.
  • Cook the liver for 2-3 minutes (no more than that, because it will harden) and serve.
